Sweet, savory, and umami crispy air fryer salted egg chicken is simply amazing.
Salted egg chicken is a popular dish in many Asian countries. It can be made using various methods, but one of the most popular is air frying. This simple recipe will show you how to make air fryer salted egg chicken that is crispy and delicious.
WHAT YOU WILL NEED TO MAKE AIR FRYER SALTED EGG CHICKEN
INGREDIENTS:
- Chicken: I prefer chicken thighs as they are more tender
- Salted Egg Yolk: These are hard to come back but you can usually get them in those Asian stores
- Curry Leaves: Dry or frozen curry leaves
- Corn Flour: For coating the chicken for air frying.
- Butter: To elevate the flavor
- Egg: Medium egg beaten
- Fresh Chilli: Sliced and added for flavor
- Olive Oil
- Rice wine
- Sugar
- Salt
- Pepper
- Garlic: Minced
- Ginger: Minced
HOW TO COOK SALTED EGG CHICKEN WITH AN AIR FRYER
Cut chicken thigh into small 1 inch chunks. Place chicken into a medium bowl.
Add pepper, sugar, salt, and rice wine to the chicken. Marinate for 15 minutes.
Meanwhile, steam the 4 salted egg yolks for 10 minutes. Once done, mash the egg yolks as finely as possible. Set aside.
Preheat the air fryer to 380F for 3 minutes. Lightly coat the airfryer basket with some oil.
Add the beaten egg into the bowl with the chicken. Mix well.
In a shallow bowl, add the cornflour. Evenly coat the chicken with cornflour and place them into the air fryer. Do not overcrowd the air fryer basket. Cook for 10 minutes. Shake the basket halfway through cooking. Once the chicken is cooked. Set them aside
In a frying pan on medium heat, add butter and 2 tablespoons of olive oil. Once butter melts, add in garlic, ginger, curry leaves, and chili. Fry the mixture for approximately 3 minutes.
Add the salted egg yolks. On medium heat, break up the yolk as much as you can with your spatula. Continue to fry until the egg yolk changes color.
Finally, add the chicken in, toss to coat with sauce, and serve. I like to serve the salted egg chicken with steamed rice.
TIPS:
- SIZE OF THE CHICKEN – This recipe works with bite-sized chicken or chicken wings or drumettes. I prefer bite-sized chicken as it is more enjoyable.
- FRY IN SMALL BATCHES – Cook in batches to avoid overcrowding the basket. Overcrowding will make the chicken less crispy.
