WHAT YOU WILL NEED FOR THE AIR FRYER ROAST PORK

Ingredients:

  • Pork belly slab: Be sure to get a piece that has a good meat-to-skin ratio.
  • Chinese five spices powder: To enhance the flavor of the meat. Can be found in the Asian aisle at most grocery stores.
  • Salt: For seasoning the meat
  • Pepper: Finely ground pepper works best here
  • Coarse sea salt: For extracting the moisture from the skin
  • Vinegar: Helps to extract the moisture from the skin to give the roast a good crackling
  • Olive oil

HOW TO MAKE AIR FRYER ROAST PORK

Wash and pat dry the pork belly.

Punch lots of holes into the skin of the pork belly using a metal fork. Do not punch the holes too deep.

Apply the meat rub (mixture of five-spice powder, salt, and pepper) on the sides and the bottom of the pork belly. Avoid the skin.

Next, brush the pork skin with vinegar. Place the meat on a tray and leave it in the fridge uncovered and allow the skin to dry for a minimum of 12 hours.

Take out the pork belly from the fridge. Wrap the meat with aluminum foil leaving the skin exposed.

Place coarse sea salt onto the skin of the pork belly, make sure you cover every part of the skin.

Preheat the air fryer for 5 minutes at 360F.

Place the belly into the air fryer and cook for 20 minutes.

Once done, remove the foil and pork belly from the air fryer. Remove the foil and scrape off the salt from the skin.

Place the pork belly back into the air fryer basket, skin side facing up. Spray some oil onto the skin.

Cook for 15 minutes at 400F. Once done, let it rest for 15 minutes before slicing.

TIPS FOR A GOOD CRISPY AIR FRYER ROAST PORK

  • The ideal pork belly should have a good ratio of fat to meat, resulting in juicy and moist meat. If there’s too much fat, it won’t taste good; if there isn’t enough fat, your meat might be a little dry.
  • Prick or score the skin to get a good crackling.
  • Refrigerate the pork belly skin side up. The skin must be dry, or you will not get that crispy effect! Always refrigerate overnight for optimum results, it allows the pork to fully absorbed the seasonings.
