Air Fryer Zucchini Fries are not only crispy and delicious, but they are healthy too! This healthier version of zucchini fries is addictive as a snack, appetizer, or side dish. By cooking them with an air fryer, I only need to oil them lightly; hence it is very healthy and low in calories.
I love zucchini fries, but don’t like having to fry them with oil; that’s too many calories to take. With the air fryer, I can enjoy these zucchini sticks that are coated with seasoned parmesan breadcrumb without all the fats. They are air-fried until crisp and golden. I love to serve them with Ketchup.
How to Make Air Fryer Zucchini Fries
Trim off the ends of the two thick zucchini. Cut the zucchini into half and slice each into 1/2-inch sticks or fries.
Set the zucchini aside. In a shallow bowl, add 1/2 cup Panko breadcrumbs, 1/4 cup parmesan cheese, 1/2 teaspoon garlic powder, 1/4 teaspoon onion powder, and 1/4 teaspoon paprika, and 1/2 teaspoon both salt and black pepper. Stir well to combine.
In another shallow bowl, beat 1 large egg.
Dip the zucchini sticks in the egg mixture. Transfer them into the breadcrumbs mixture, and coat the zucchini sticks evenly with the breadcrumbs.
Lightly coat the air fryer basket with some olive oil. Place the zucchini fries into the air fryer basket on a single layer. Cook for 8 to 10 minutes at 360F or until golden and crispy. Cook them in batches if required, depending on the size of your air fryer. Do not overcrowd the air fryer basket.
Once cooked, let it cool down slight and serve with ketchup.
