Trim off the ends of the two thick zucchini. Cut the zucchini into half and slice each into 1/2-inch sticks or fries.
Set the zucchini aside. In a shallow bowl, add 1/2 cup Panko breadcrumbs, 1/4 cup parmesan cheese, 1/2 teaspoon garlic powder, 1/4 teaspoon onion powder, and 1/4 teaspoon paprika, and 1/2 teaspoon both salt and black pepper. Stir well to combine.
In another swallow bowl, beat 1 large egg.
Dip the zucchini sticks in the egg mixture. Transfer them into the breadcrumbs mixture, and coat the zucchini sticks evenly with the breadcrumbs.
Lightly coat the air fryer basket with some olive oil.
Place the zucchini fries into the air fryer basket on a single layer. Cook for 8 to 10 minutes at 360F or until golden and crispy.
Cook them in batches if required, depending on the size of your air fryer. Do not overcrowd the air fryer basket.
Once cooked, let it cool down slight and serve with ketchup.
