- 2 Boneless chicken thighs
- 3 tbsp Olive cil
- 20 Curry Leaves
- 1 Medium egg (beaten)
- 1 cup Corn flour
- 1 tbsp Butter
- 2 Small fresh chilli
- 1 tsp Sugar
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 tbsp Rice wine
- 4 Salted egg yolk
- 1 tsp Garlic (minced)
- 1 tsp Ginger (minced)
Cut chicken thigh into small 1 inch chunks. Place chicken into a medium bowl.
Add pepper, sugar, salt, and rice wine to the chicken. Marinate for 15 minutes.
Meanwhile, steam the 4 salted egg yolks for 10 minutes. Once done, mash the egg yolks as finely as possible. Set aside.
Preheat the air fryer to 380F for 3 minutes. Lightly coat the airfryer basket with some oil. Add the beaten egg into the bowl with the chicken. Mix well.
In a shallow bowl, add the cornflour. Evenly coat the chicken with cornflour and place them into the air fryer. Do not overcrowd the air fryer basket. Cook for 10 minutes. Shake the basket halfway through cooking. Once the chicken is cooked. Set them aside
In a frying pan on medium heat, add butter and 2 tablespoons of olive oil. Once butter melts, add in garlic, ginger, curry leaves, and chili. Fry the mixture for approximately 3 minutes.
Add the salted egg yolks. On medium heat, break up the yolk as much as you can with your spatula. Continue to fry until the egg yolk changes color.
Finally, add the chicken in, toss to coat with sauce, and serve. I like to serve the salted egg chicken with steamed rice.
